The food division at MacFarlane Pheasants is busy building an inventory of our most popular game bird items. It is only September, but many of our customers are planning ahead to order holiday gift packs for friends and employees. Other pheasant lovers are checking our recipes and ordering pheasant delights for special dinners during the holiday season. Recipes are also available within our www.pheasantfordinner.com web site. I have personally prepared each recipe/item mentioned in the blog and they were all delicious!
The inventory we are preparing ahead, for gift packs, include three main items.
• Whole pheasants
• Pheasant pot pies are produced by our pot pie producer in Milwaukee. We typically order 2500 pies at a time.
• Smoked pheasants are being smoked by our friends at Wilsons’ Meats in Elkhorn. This is a busy time of year for them also, so we only send about 200 pheasants per week. We don’t want to overwhelm them, but we need about 1000 birds smoked by the end of September to be prepared for the upcoming rush.
This summer brought us an even larger demand for smoked pheasants. One of our customers put in an order for 700 smoked pheasants so that brought our need for smoked pheasants to 1700. We are happy to oblige!
Another important step in our gift pack season is making sure we have enough dry ice to ship packages We use both dry ice and gel ice packs. Producing dry ice is costly and time sensitive. We have to let our producer know weeks in advance what our needs will be for our use season. We pick up dry ice in Madison every Monday. At the season’s peak, we will need 1000+ pound per week.
