3 lbs of venison
1 cup catsup
1 T salt
3 slices lemon
1 onion, sliced thin
1/3 cup beef steak sauce
2 T tarragon vinegar (optional)
1 T chili powder (for hot sauce)
- Sear venison in frying pan with slices of pork salt or other fat. Mix the rest of the ingredients in a saucepan.
- Bring mixture to a boil, stirring constantly.
- Cover venison with sauce and roast in over at 350°F. Cook 1 1/2 to 2 hours, turning occasionally.
