Elk Meatball Appetizers

Prep Time: 20 minutes
Cook Time: 45 minutes (Crock Pot: 1 hour on high, 2 hours on low)

2 lbs Elk burger
2 eggs, lightly beaten
1 cup mozzarella cheese
1/2 cup dry bread crumbs
1/4 cup onion, finely chopped
2 T Parmesan cheese, grated
1 T Catsup
2 t worchestershire sauce
1 t Italian seasoning
1 t dried basil
1 t salt
1/4 t pepper

Sauce Ingredients:

1 jar grape jelly
1 jar chili sauce

Cooking Instructions:
  1. In a bowl, combine meatball ingredients; mix well.
  2. Shape into 1 inch balls and place on rack in shallow roasting pan. Bake at 350 degrees F for 10 - 15 minutes. Remove meatballs.
  3. Combine jelly and chili sauce in 3 quart saucepan. Cook over medium heat until jelly is melted, stirring to mix well. Add meatballs.
  4. Simmer for 1/2 hour on stovetop or place in crockpot on high for 1 hour or low for 2 hours.
