Other Game Meat Recipe
Game meat sold in the United States come from farm raised sources like the pheasant raised by our own farm. Why choose game meat over domestic protein sources such as beef, lamb or chicken? Game meat is known for being lean, high in protein, low in cholesterol, with distinct flavor often described as being more rich or intense than domestic proteins.
Due to the low fat nature of these meats, it’s best to cook at lower temps to at least 160 degrees (for steaks cook to medium rare) then allow carry over heat to finish the cooking process to your desired doneness level*. Over cooking will result in dry or tough meat which will not make for a pleasurable dining experience. Marinades work well with game meats as they will help to add moisture during the cooking process, while they add flavor and tenderize the meat further.
